Ports of Call’s culinary team is exceptional, with two Cordon Blue Trained Chefs working as Executive Chef and Sous-Chef/Kitchen Manager, talented line cooking staff also having seasoned experienced and capable of creating innovative dishes. Our Kitchen also has a team of seasoned kitchen assistants/dishwashers. Some idea of the background of our staff:

Joseph Stolz – Executive Chef
Originally from Thailand, Joe moved to Southport at an early age to attend school, and worked at many local area restaurants. Joe moved back to Thailand in 2007 to attend Cordon Bleu Culinary School and graduated with the Grand Diploma, both in cuisine and pastry. Joe then did an internship at the Dome in Bangkok, working under Michelin starred Chefs. He then worked as Chef de Partie at a 5 Star hotel, the Pan-Pacific, and then later opened his own American-Thai Restaurant from 2009 to 2013. Joe moved back to Southport in 2014, inspired by World Cuisines, especially Asian, French and Fusion. Joe is passionate about using high quality ingredients and in plate presentation, and has overseen our dinners for the better part of the last three years. He has also managed development of our seasonal menus

Greg Feltz – Sous-Chef and Kitchen Manager
Graduate of Le Cordon Bleu Culinary School in Orlando, Florida. Worked for Universal Studios in Orlando, and initially moved to Southport area in 2011 and worked for the Bald Head Country Club, Landfall Country Club and the Pharmacy Restaurant. Greg hails originally from Buffalo, New York. He is passionate about cooking and can often be found in the Farmer’s Market in the Summer getting inspiration for planning daily features.

Mike Kruse III: Kitchen Assistant
Mike is a graduate of South Brunswick High School and he is self-taught in the kitchen. He started working in a Thai Restaurant at an early age, and since then he’s learned a great deal working for various restaurants including Shagger Jacks, Bald Head Island and as a Sous-Chef at a military base in Southern California. Mike loves cooking and watching people take the first bite, and seeing the excitement in their eyes. Mike’s talents fit in well with Ports of Call’s emphasis on international foods.

Amanda Canby is the Bar Manager and Mixologist at Ports of Call. She attended Towson University in Baltimore, MD and obtained a Bachelor of Science in Psychology before moving to Southport almost two years ago. She traveled to Argentina to study abroad on the subject of Industrial and Organizational Psychology and intended to use her degree for Human Resources and Management. While working towards her degree, Amanda worked at Gertrude’s fine dining restaurant in the Baltimore Museum of Art under a prestigious Mixologist for about six years. She learned about liquor infusion and creating her own house-made syrups using fresh fruits and herbs that she grew herself to create unique and refreshing cocktails. Amanda feels lucky \ to utilize both her managerial skills and knowledge of Mixology at Port of Call Bistro, and is proud say that she works here.
